Avocado quinoa coleslaw is made with cooked quinoa, chopped onion and a coleslaw mix. A creamy avocado mayonnaise dressing is tossed with just three ingredients! This is an easy salad to make with any chicken, beef or fish recipe.

Avocado Quinoa Coleslaw
This salad is healthy and EASY. It requires only three main ingredients plus a creamy homemade salad dressing.
Today I’m using a store-bought coleslaw mix to make life easier. The one I used had shredded broccoli, cabbage and carrots. This will save you a bunch of time! You can use any style of coleslaw mix that isn’t already mixed with dressing.
Simple salads like this one are great to serve with almost any recipe. I like to serve with baked chicken legs, pork chops or barbecued steak. You can use this as a meal prep lunch for the week, serve it at a picnic or potluck.

Avocado Quinoa Coleslaw Ingredients
Here’s what you’ll need to make this recipe:
- Quinoa – This recipe uses 1½ cups of cooked quinoa. If you need to cook it beforehand, you can use ¾ cup of raw quinoa with 1½ cups of water.
- Coleslaw Mix – I used a store-bought mix of shredded broccoli, cabbage and carrots.
- Onion – You’ll need 1 cup of chopped yellow onion. Red onion will also work.
- Dressing – The dressing is made with mayonnaise, mashed avocado, apple cider vinegar, salt and pepper. You can use a vegan mayonnaise or regular mayonnaise. I like to use chosen foods avocado oil mayonnaise.

How To Cook Quinoa
Love and Lemons does an amazing job explaining how to cook fluffy quinoa. But here’s a quick overview – the trick is to not stir until the end!
- Add quinoa and water to a pot. Bring to a boil then reduce to let simmer until the water cooks down and is absorbed by the quinoa.
- Do not stir during this time – Instead, use spoon to gently move quinoa to see if there’s any water left at the bottom of the pot. If there isn’t any, remove from heat and let it sit covered with a lid for 10 minutes.
- Fluff with a fork – now you can use a fork to fluff up the quinoa. When you wait until the very end, you avoid creating mushy quinoa that nobody likes.
How To Make Avocado Quinoa Coleslaw

- Cook Quinoa – The quinoa needs to be cooked before you can make this recipe. You’ll need 1½ cups of cooked quinoa.
- Salad Dressing – Use a ripe avocado and mash it with a fork – you want it nice and creamy. Next, add in the mayonnaise, apple cider vinegar, salt and pepper. Mix everything together.
- Assemble – Chop the onion. Add it to a large bowl with coleslaw mix, cooked quinoa and salad dressing. Mix everything together.
- Chill – The salad needs to be chilled for at least 2 hours before serving. I like to make the salad the night before and let it chill overnight for best results.

- 1½ cups cooked quinoa

Instructions
- Cook quinoa according to package instructions (¾ cup dry quinoa + 1½ cups water will make about 1½ cups cooked quinoa).
- In a bowl, mash the ripe avocado with a fork.
- Add in the mayonnaise, apple cider vinegar, salt and pepper. Mix together.
- Add cooked quinoa, coleslaw mix, and chopped onion to a large bowl.
- Add the avocado salad dressing.
- Mix everything together. Cover and let chill in the fridge for 2 hours before serving.
