Quick and Easy Greek Salad
This is a really quick salad to put together that tastes great with almost anything. You’re looking at fresh ingredients of romaine lettuce, grape tomatoes, red onion, cucumber, olives and feta cheese. A simple but flavorful red wine vinaigrette is drizzled overtop of everything. I was able to whip this salad up in about 15 minutes!
What I love about this recipe is that it’s so simple and can easily be paired with almost any main dish recipe that you make for dinner. I don’t like a lot of fuss in my meals which is why I love easy salads.
Homemade salad dressing is a healthier way to add flavor to your salads. You’ll avoid excess preservatives, salt, sugar and other processed ingredients. This dressing is made from inexpensive ingredients including red wine vinegar, olive oil, garlic, salt and pepper.

Greek Salad Ingredients
Here’s an overview of what you’ll need to make this recipe with full details in the recipe card at the bottom of this post.
- Lettuce – This recipe uses 4 cups of romaine lettuce. Alternatively you could use green leaf lettuce or mixed greens.
- Tomatoes – You can use grape tomatoes or cherry tomatoes for the recipe.
- Cucumber – You’ll need 1 cup of chopped cucumber.
- Onion – Red onion works best as it has a sweeter taste when eaten raw. Slice it into very thin long strips.
- Olives – Make sure to use pitted olives. Any style will work: black olives, kalamata olives, green olives etc.
- Feta Cheese – I prefer to use goat’s feta cheese (made with goat’s milk) but you can also find feta cheese made with cow’s milk. I tend to find this in the deli meat area of my grocery store where specialty meats and cheeses are located.
- Vinaigrette – A very simple dressing is made from red wine vinegar, olive oil, garlic, salt and pepper.

How To Assemble The Salad
Here’s a quick overview of how to make the salad with full instructions in the recipe card at the bottom of this post.
- Prep Dressing – Mix together the red wine vinegar, olive oil, minced garlic, salt and ground pepper in a small bowl. Use a fork to whisk it together. Set aside.
- Prep Salad – Wash all vegetables. Chop the lettuce into bite size pieces. Slice the grape tomatoes and pitted olives in half, Slice the red onion into thin strips.
- Assemble – Add all vegetables to a large serving bowl along with crumbled feta cheese. Drizzle the salad dressing overtop and toss everything together. Feel free to add more feta cheese, salt and pepper at this point (if needed). Serve and enjoy!

Ingredients
- 4 cups romaine lettuce - chopped small
- 2 cups grape tomatoes - halved
- 1 cup chopped cucumbers
- ¾ cup thinly sliced red onion
- 10 pitted olives - halved
- ¼ cup feta cheese - crumbled
- ¼ cup red wine vinaigrette
- 3 Tbsp olive oil
- 1 garlic clove - minced
- ½ tsp salt
- ¼ tsp ground pepper
Instructions
- Make the salad dressing: Add olive oil, red wine vinaigrette, a minced garlic clove, salt and pepper to a small bowl. Whisk together and set aside.
- Wash and chop the lettuce, slice the tomatoes, chop the cucumber, thinly slice the red onion, and slice the olives. Add them to a bowl along with feta cheese.
- Drizzle the salad dressing on top and toss everything together. Serve and enjoy!
