No-Bake S’more Bars

No-bake s’more bars are one of the easiest ways to enjoy this campfire style dessert at home.

These are fast to make and much easier to eat than the traditional campfire version. With just four ingredients, graham crackers, butter, marshmallows, and chocolate chips, these can be put together fast without baking.

An Easy Treat For Kids!

These aren’t just for kids, adults will love them too.

  • Only four ingredients are needed for this easy dessert recipe.
  • This is a no-bake recipe. All you need to do is melt marshmallows with butter on the stove, then mix with crushed graham crackers and top with marshmallows and chocolate chips.
  • Slice these big or small. They make a delicious mini-snack packed in kids lunches. Or serve them at birthday parties or potlucks and you’ll have very happy guests.
  • These take only a few minutes to make and are then chilled in the fridge before slicing and serving.

Recipe Ingredients

MARSHMALLOWS: This recipe uses mini marshmallows. They’re the perfect size to sprinkle on top of these dessert bars.

GRAHAM CRACKERS: Graham crackers are traditionally used in campfire s’mores and they make the perfect cookie base for these bars too! You’ll need about 1 sleeve of graham crackers depending on the size of package. I used 32 crackers for this recipe. It’s okay if you use a few more or few less.

BUTTER: Personally, I love to use salted butter when melting with marshmallows. I love that subtle hint of saltiness in the recipe. You can also use unsalted butter.

CHOCOLATE CHIPS: Feel free to use dark chocolate chips, milk chocolate chips or even white chocolate chips for this recipe.

How To Make S’more Bars

Crispy, sweet and a little gooey – can a treat get any better?

  1. Melt butter with marshmallows on the stove.
  2. Mix with crushed graham crackers according to full recipe instructions below.
  3. Press into greased baking dish. Top with chocolate chips and a sprinkle of mini marshmallows.
  4. Microwave to quickly melt chocolate and marshmallows just a bit.
  5. Let cool, then refrigerate for 1 hour. Slice into bars, serve and enjoy!

Recipe Tips

  • Use a microwave-safe square baking dish for this recipe.
  • Crush the graham crackers into small, bite-size pieces. If they’re too big, it will be harder to press them into the dish.
  • Use mini marshmallows if possible. These are perfect for sprinkling on top. If you have regular size marshmallows, you can cut them into smaller pieces and use those for the topping.
  • When pressing the melted marshmallows and graham crackers, be sure to grease your fingertips with a bit of cooking oil. This will make it easier to press without sticking.
  • The recipe is heated in the microwave for 30-90 seconds. Melt in 30-second increments, keeping an eye on it as it goes. As soon as the marshmallows start to melt you can stop. You want the marshmallows to maintain their shape but be slightly melted so they stick to the top of the bars.
  • Refrigerate the bars for at least 1 hour, or until the chocolate chips have firmed up. This makes it easier to slice into the bars with a sharp knife.

  • Spray a square microwave-safe baking dish with nonstick cookin spray.

  • Break apart the graham crackers into smaller bite-size pieces.

  • Heat a pot on the stove over medium-high heat. Melt the butter, then add the marshmallows.

  • Stir the marshmallows frequently until they've melted. Remove from heat.

  • Add the broken crackers to the pot and mix together.

  • Scoop the mixture into the greased baking dish. Grease your fingertips then press the crackers down.

  • Sprinkle the chocolate chips overtop along with a handful of mini marshmallows.
    Place the whole dish in the microwave on high for 60-90 seconds or until marshmallows and chocolate start to melt just a bit.
    Let cool on the counter, then place in the fridge to chill and firm up for 1 hour.
