Ground beef is browned with onions and garlic. Once cooked, kidney beans, tomato and spices are mixed in. Lettuce and crushed tortilla chips are topped with the ground beef mixture for a delicious salad idea.
In a pan over medium-high heat, add a bit of cooking oil and saute the onion and garlic 1-2 minutes. Until onion turns translucent.
Add in the ground beef and spices (chili powder, cumin, oregano, salt). Break apart the ground beef and cook until no longer pink. Drain any excess grease.
Stir in ½ cup of salsa.
Add tomatoes and kidney beans. Mix in and cook until warmed through, about 2-3 minutes.
Add 2 cups lettuce to each serving plate. Top with 1 cup crushed tortilla chips.
Add 1 cup of ground beef mixture.
Top with 2 Tbps salsa, 1 Tbsp sour cream, and any other toppings you like. Serve and enjoy!
Recipe Notes:
The leftover cooked ground beef mixture should be stored separately in an airtight container. Lettuce and tortilla chips will turn soggy if stored together. Keep chopped lettuce in a separate air-tight bag or container.
