Wash potatoes and slice off any unwanted pieces. Use a fork to prick the sides of the potatoes in multiple places.
Add olive oil, minced garlic, parsley, salt and pepper to a bowl. Mix together. Set aside.
Place potatoes on a microwafe safe plate in a single layer. Microwave for 9-11 minutes. Check doneness by poking potatoes with a fork.Carefully remove plate from microwave using oven mitts (it will be hot).
Toss potatoes with the dressing.

Leftovers can be stored in an airtight container in the fridge up to 4-5 days. They can be reheated in the microwave.
Any style of potato that you would bake in the oven or barbecue will work for the microwave method.
Large sweet potatoes will probably be too big and take too long to cook. Slice them in half or quarters before cooking.
Flavor the potatoes any way you’d like. Drizzle melted butter, drizzled olive oil, avocado oil, or coconut oil. Add flavor with sour cream, minced garlic, chopped cooked bacon, chives, hot sauce, salsa, salt and pepper.
