Healthy rolled oats are mixed with ripe bananas, eggs, milk, baking powder, cinnamon and vanilla to create the perfect pancake consistency. We are HUGE fans of this recipe in our house!
Add all ingredients to a blender or food processor. 2 cups old-fashioned rolled oats, 3 overripe bananas, 1 cup milk, 2 eggs, 2 tsp baking powder, 1 tsp cinnamon, 1 tsp vanilla extract, and ½ tsp salt. To make without a blender or food processor, visit the 'tips' section for instructions.
Blend until smooth, about 1-2 minutes. Let the batter rest for 10 minutes to thicken.
Heat oil (olive oil, coconut oil, etc) in a large nonstick skillet over medium-high heat. Use ¼ cup of batter for each pancake. Pour into the hot oiled pan and cook until bubbles appear. Flip the pancakes and cook for an additional 2-3 minutes.
Add to a plate and cover with a towel until the batch is complete, or serve individual hot pancakes like my dad used to do. Delicious topping ideas can be found in the 'tips' section.
