Preheat the broiler and line a baking sheet with parchment paper.
Cook the onion with a bit of oil in a frying pan over medium high heat.
Stir in canned chili, canned mushrooms and chopped bell pepper. Cook for 3-5 minutes, stirring often.
Place the garlic bread on a bakign sheet. Spoon the chili mixture on top of each side of the bread.
Sprinkle parmesan and shredded mozzarella cheese on top. Broil for 2-4 minutes on the middle rack, or until cheese is melted and the garlic bread is crispy and toasted. Slice and serve.
Recipe Notes:
This recipe is easy to adapt. Add ground beef to the chili. You can use spaghetti sauce or pizza sauce: cheddar cheese or marble cheese instead of mozzarella. Add black beans kidney beans, chickpeas, or lentils for added protein. Use hamburger buns instead of garlic bread. Basically, you can use this recipe as a guide but create your own unique variation.
Bake it according to the garlic bread package instructions to ensure that it is toasted.
Watch the recipe carefully when using a broiler. Things can burn quickly, so it’s best to keep an eye on them. You only need a minute or two for toasting the bread. And another minute or two to melt the cheese. I prefer to cook on the middle rack when using my broiler. The top rack burns too easily in my oven.
The chili mixture makes delicious leftovers! Just store it separately from the bread so that it doesn’t get soggy.
